Hot Cashews

Follow this recipe for chilli cashews and try them as a snack with a drink. They are absolutely delicious.

Hot Cashews

INGREDIENTS

620ml sunflower oil
250g raw cashews
2 spring onions, thinly sliced (white part whole and half the green part)
2 hot red peppers seeded and chopped
1 teaspoon salt

INSTRUCTIONS

1. Heat the oil in a large frying pan or wok. Add the cashews and fry them until browned (do not let it overcooked because they continue to cook even if they have been removed from the oil). Drain thoroughly in a colander placed over a bowl.

2. Reheat the wok or pan (do not wipe off the oil that is left) and lightly saute the onion with the peppers until they become crispy. Pour the cashews back into the pan and let them fried all together for a minute. After the cashews cool down, can be served.
