Rice with saffron and nuts

The following recipe is very rich and fragrant, served as an accompaniment to a good main course.

Rice with saffron and nuts

INGREDIENTS

500g basmati
2 tablespoons sesame oil
1 teaspoon ground cardamom
1 teaspoon saffron powder
1 liter of water in which is dissolved a chicken stock, preferably organic Juice and zest of one lemon
2 tablespoons toasted pine nuts
2 tablespoons chopped almonds
2 tablespoons cashew
2 tablespoons pistachios
2 tablespoons chopped fresh coriander

INSTRUCTIONS

In a saucepan, heat the sesame oil and fry for a little the rice.
Add the cardamom, saffron and water with the broth. Then add the lemon juice and zest and let them boil for 2 minutes.
Lower the heat, cover the pot and simmer for about 20 minutes until the rice be ready.
Before serving, mix in all the nuts and garnish with the coriander.
