Relish with dried fruit

A wonderful, sweet relish that perfectly matches with the English cheese, “stilton”. An irresistible combination!

Relish with dried fruit

INGREDIENTS

300g dried apricots cut into pieces
280g dried dates cut into pieces
375g dried figs cut into pieces
750 ml scalding hot water
330g brown sugar
310g Apple cider vinegar
2 teaspoons salt

INSTRUCTIONS

1. In a saucepan put the dried fruit with water and leave it for 30 minutes.

2. Add to the pot the rest of the ingredients and stir it over medium heat until the sugar is dissolved. Increase the heat and bring the mixture to boil. Stir and at the same time lower the heat and let it simmer for 40 minutes.

3. Transfer the mixture into sterilized jars and seal it while relish still hot.
