Chicken with cashews

A very quick and easy dish. You do not necessarily have to make for an Asian diner.

Chicken with cashews

INGREDIENTS

40 ml sunflower oil
½ teaspoon garlic crushed
400 g. chicken fillet (each fillet cut into 3-4 pieces)
¾ cup cashew nuts
1 tablespoon chopped onion
40 ml fish sauce
1 tablespoon soy sauce
1 dried hot red pepper chopped and seeded
½ cup coriander leaves

INSTRUCTIONS

1. Heat the oil in a pan and fry the garlic. Add the chicken pieces and fry them for about three minutes until the chicken changes color.

2. Pour the pot of cashew nuts, the fish sauce, the soy sauce and dry pepper and cook for three minutes still stirring. Serve with coriander leaves.
